SPICE UP YOUR CINCO DE MAYO WITH AUTHENTIC GUACAMOLE π₯π π²π½
The best guac you'll ever have + a protein packed quesadilla + a tequila drink that's not just a margarita & more!
HOLY GUACAMOLE
Everything that our momβs friend Adrien makes is π― ππ» π₯. Even just his cut-up cucumbers with salt and pepper are amazing. His skills at picking the best produce are unmatched. While we already shared his Mexican tuna salad/ceviche, what heβs really known for is his guacamole. We beggggg for this stuff. Itβs fresher and more delicious than any guacamole I have ever tasted. Itβs also, surprisingly, not mashed. Adrien uses a spoon to scoop out thin slices of avocado, he also marinates the onions in the lime juice for a few minutes before he adds the rest of the ingredients to soften the flavor of the raw onion. He then adds tomato, cilantro, and a generous amount of sliced serrano peppers and gently mixes it all together to create the perfect guacamole.
Obviously, you can adjust the amount of Serrano to impact the level of spiciness. Adrienβs has a good kick but isnβt too spicy for the average person. My momβs bestie Ponce cannot take any heat. When Adrien would make his guac, Ponce always asked if it was spicy this time. My Mom would take a bite and casually tell him it wasnβt at all (wink wink). And every time, Ponce would dig in and take the biggest Serrano pepper-filled bite π. So if youβre like Ponce, cut the amount of Serrano in half and remove the seeds and veins.
Continuing with our Cinco De Mayo theme, I recently made my Healthier Quesadilla for dinner and it really hit the spot. Quesadillas arenβt just for kids and picky eaters and they donβt have to be overly cheesy and rich. This version uses a little less cheese and a lot of veggies and protein. I fill them with leftover rotisserie chicken, black beans, peppers, onion, and corn, but you can use whatever leftover produce and protein you have. And then I obviously top them with Adrianβs guacamole for a perfect quick and easy meal.

I love a margarita, but I also love a piΓ±a colada. It occurred to me, why not mix the two and use CocoWhip instead of coconut milk to make it a little lighter? The result is better than I expected. Itβs also SO EASY. Give it a try this Cinco de Mayo!
