Itโs almost eclipse time ๐๐๐๐
If you havenโt heard, thereโs a total solar eclipse in the U.S. on April 8th! I never thought much about eclipses until my husband and I listened to a podcast about an eclipse chaser in 2017. The way he described it sounded SO cool that we knew we had to see the eclipse that year. We rented an Airbnb in St. Louis within the path of totality and were ready to experience this celestial event, when we woke up the morning of to a very cloudy sky! We downloaded a special weather app and found an area about an hour away with a better chance of clear skies. There, we stumbled upon the cutest winery offering a viewing area and some eclipse wine slushies (which I obviously had to get). It truly is such a crazy experience to witness the sky darkening and animals becoming loud and then dead silent. So if youโre able to travel to the eclipse on Monday I highly recommend it!!!


This week is also my birthday week ๐. Last year, I made myself an ice cream cake I was craving (you can watch me make it here) and had an amazing omakase sushi dinner with my sister. This year, I will be in Michigan having dinner at my favorite Middle Eastern restaurant, Phoenecia, with the best ribs of all time. And the following day weโll head to Cleveland to watch the eclipse with our friends who live there!

Dior Backstage Glow Face Pallet: Saying Iโm obsessed is an understatement. I use this pallet every single day. I wear this as an inner corner highlight on my eye or as a beautiful glowy all-over eyeshadow. But this pallet can be used on your entire face as highlight, bronzer, and blush. It lasts forever, so this is in my cart for my Mom :)
Benetint Lip & Cheek Stain: This is a cult classic. I even remember this stuff back when I was in middle school. Its timelessness can be attributed to its beautiful sheer color, longevity, and the fact that it can be used on lips and cheeks. I like to wear it alone on my lips, as a base under lipstick/gloss, or on my cheeks for a natural flush that doesnโt budge.

HONEY CANDIED KUMQUATS
These no-cook candied kumquats are SO easy to make. All you need to do is slice them and cover them in honey and you are good to go. They are delicious in cocktails, tea, sauces, marinades, and desserts.

Maybe I am biased โ๏ธ, but April is one of my favorite months, especially for food. Here are some of my favorite springtime recipes.
SHIITAKE TACOS WITH CRISPY CHEESE TORTILLAS & AVOCADO CREMA
These are the perfect vegetarian tacos for Spring. The roasted shiitakes are meaty and delicious, especially topped with avocado crema, pickled onions, and pepitas. But my favorite part is the crispy cheese tortillas.

SPRING LEEK PASTA
This is the spring version of aglio e olio (garlic and oil pasta) with a little less garlic and a lot of sautรฉed leeks. The hint of lemon, red pepper flakes, and cheese really takes it up a notch.

GREEK MEATBALLS WITH LEMONY ORZO & CUCUMBER, TOMATO SALAD
These meatballs are light and delicious and taste great with the lemony orzo and tomato salad. This recipe makes a lot so if you are only making this for one or two people and do not want leftovers I suggest cutting the recipe in half.

ROASTED ZUCCHINI WITH BRUSCHETTA SALAD
This Thomas Keller method of searing and roasting zucchini is the most delicious way to make it. It goes perfectly with a bruschetta salad that has tomatoes, basil, shallot, and crispy bread.
